Every time I pass by Aunt Colie's house, she's in the kitchen baking one of her Cajun fruit pies for us. The smell of the fresh apples cooking for her French Apple pie fills your nose. You know, with its sinfully rich pecan cookie crust thats chewy, buttery, filled with pecan pieces and having just the right amount of crispness around the edges that will let it melt in your mouth with every bite. And, the incredibly moist and fluffy cake like shell soaked with the warm juices of the apples and with a hint of coconut flavor that you love so much. Or, my favorite Passionate Peach pie, with its heavenly crust having roasted walnut chips that remind me of Christmas roasting nuts on an open fire. We have what you crave, and you deserve it! Recipes for Aunt Colie's "Original" Cajun Fruit Pies have been handed down through the generations from Great Uncle Tut's original pastry pie recipe having a pie shell with the moist and fluffy texture of cake and a pie top crust with the characteristics of a chewy, buttery cookie, blending the heritage of French confections from France brought by the Acadians to Louisiana with the unique Cultures of the Cajuns of South Louisiana.
Today, Aunt Colie's pies are furnished on an "as ordered" basis so that each pie arrives as fresh as possible, made from the finest ingredients , and to provide you with a fruit pie like no other. A scrumptious cake textured shell filled with your choice of apple, peach, blueberry or cherry fillings and a cookie textured top crust blended with either pecan, walnut or macadamia nuts.
